Brighter and more high-toned than the 2017, the paler color and explosive citrus fruits reflect the mild and perfect 2018 vintage. Fresh aromas of Satsuma mandarin, pink grapefruit, and floral honeysuckle prime the palate for the flavors of nectarine and strawberry preserves. Juicy and bright, but with a silkiness, Hi No Tori rosé finishes with a briny quality that begs for another sip.

火鳳凰代表Kanpai酒莊從2017年的加州大火中重生,每一年的火鳳凰,我們都會從銷售中撥出一部分捐給Napa重建基金,來延續這份逆境重生的精神及韌性。
Japanese for “Bird of Fire”, this is the wine that started it all. The phoenix symbolizes our birth from the 2017 wildfires, just months after our family came to the Napa Valley. In the spirit of rebirth and resilience, every year we have donated the proceeds from this wine to fire relief efforts in our community.

Made from grapes harvested after the 2017 wildfires, this wine truly embodies the eternal spirit of the phoenix that adorns the label. This challenging first vintage has resulted in a beautiful wine. Proceeds from the sale of this wine benefit the California Firefighters Endowment, providing scholarships to the children of fallen firefighters.

Balanced, firm structure underlies a complete beginning, middle, and end.

【2018年Napa葡萄年份】
穩定的天氣,緩慢的熟成,迎來大豐收
平穩的生長季和大豐收可以說是納帕谷2018年份的關鍵詞。這一年的天氣很討喜,2月降雨充沛,隨後迎來陽光充足、天氣溫和的春季,葡萄開花期得以延長,在此之後的坐果期和開花期均在風和日麗的天氣中度過。夏季和秋初天氣平穩,白晝溫暖,夜晚涼爽,既沒有不約而至的暴雨,也沒有突如其來的極高溫,葡萄緩慢而平靜地積累風味物質並健康地成熟。
葡萄的採摘自8月中旬開始,比2017年晚了一周左右。釀酒師和酒農們對這一年抱有極大的期許。成熟葡萄的顏色、風味和酸度都令人驚艷,釀酒師們預計這一年份的葡萄酒將擁有相當優秀的平衡性、豐富的風味和優雅的風格。

媲美清酒,挑戰日本料理良配
Aki No Mori是日文「秋天的森林」,在納帕及日本都能體現秋天的美麗。
酒標上兩隻紙摺的狐狸也代表少莊主太太Azumi和她的博美狗Kiki。雖然Azumi是日本人,但她不愛喝清酒。
她請釀酒師Steve Matthiasson挑戰,創造一款可以與清酒相媲美的葡萄酒,專門用來搭配壽司和其他亞洲食品,這款酒就是Steve熱切地接受了挑戰而創造出來的成品。
Japanese for “The Forest in Fall”, Aki No Mori embodies the beauty of autumn in both Napa and Japan. The origami foxes represent Azumi and her Pomeranian, Kiki. Although she is a native of Japan, Azumi doesn’t drink sake. She challenged Steve to create a wine to rival sake as a pairing with sushi and other Asian food, a challenge he eagerly embraced.
